Zucchini and Sweet Potato Fritters

Crispy on the outside, tender on the inside, and packed with nourishing veggies, these Zucchini and Sweet Potato Fritters are a versatile paleo favorite. Perfect for lunch, dinner, or even brunch, they’re grain-free, dairy-free, and irresistibly flavorful. Serve them with a dollop of paleo-friendly sauce or enjoy them straight from the skillet—either way, they’re a guaranteed hit.

Ingredients

  • 1 medium zucchini, grated
  • 1 small sweet potato, peeled and grated
  • 2 eggs
  • 2 tablespoons coconut flour
  • 1 garlic clove, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Coconut oil, for frying

Instructions

  1. Prep the veggies: Place grated zucchini and sweet potato in a clean kitchen towel. Squeeze out as much moisture as possible—this helps the fritters hold together and crisp up.
  2. Mix the batter: In a large bowl, combine the grated veggies, eggs, coconut flour, garlic, salt, and pepper. Stir until well mixed and slightly sticky.
  3. Heat the oil: In a large skillet, heat a few tablespoons of coconut oil over medium heat.
  4. Form fritters: Scoop about 2 tablespoons of the mixture and shape into small patties.
  5. Fry: Place fritters in the hot skillet and cook for 3–4 minutes per side, or until golden brown and cooked through.
  6. Drain and rest: Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve warm with your favorite dipping sauce—try a paleo garlic aioli or mashed avocado with lime.

Storage and Reheating Instructions

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium-low heat or in a 375°F oven for 8–10 minutes to regain crispiness. Avoid microwaving if you want to keep them crispy.

Substitutions and Variations

  • No coconut flour? Use almond flour, though you may need slightly more to help bind.
  • Add herbs: Mix in chopped parsley, chives, or dill for extra flavor.
  • Make it spicy: Add a pinch of cayenne or chili flakes to the batter.
  • More veg? Try adding a bit of grated carrot or chopped spinach to the mix.

These fritters are proof that clean eating can be crispy, craveable, and downright delicious—great on their own or as part of a vibrant paleo meal.
