Ingredients
- 1 cup fresh strawberries, hulled and sliced
- 3/4 cup full-fat canned coconut milk
- 1 tbsp honey (or maple syrup for vegan option)
- 1/2 tsp pure vanilla extract
- 1 tsp fresh lime juice
- Pinch of sea salt
- Optional: 2 tsp shredded unsweetened coconut
- Optional: 2-3 fresh mint leaves
Instructions
- Rinse the fresh strawberries under cold water, then hull and slice them into halves or quarters.
- Add the strawberries to a blender or food processor along with the coconut milk, honey (or maple syrup), vanilla extract, lime juice, and a pinch of sea salt.
- If using, add the shredded unsweetened coconut and fresh mint leaves to the blender for extra flavor and texture.
- Blend the mixture until smooth and creamy. This should take about 30–60 seconds depending on your blender’s power.
- Taste the mixture and adjust sweetness if necessary by adding a bit more honey or maple syrup.
- Pour the blended mixture evenly into popsicle molds, leaving a small gap at the top to allow for expansion during freezing.
- Insert popsicle sticks into the molds. If your mold doesn’t hold the sticks up straight, let the mixture freeze for about 1 hour first, then insert the sticks.
- Freeze the popsicles for at least 4–6 hours, or overnight, until fully solid. To release, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.

Storage Instructions
Store the Strawberry Coconut Milk Popsicles in a freezer-safe container or keep them directly in their popsicle molds. They will maintain optimal texture and flavor for up to 2 weeks in the freezer. To prevent ice crystals, make sure they are well-sealed or wrapped individually in plastic wrap or parchment paper before placing in an airtight container.
Reheating Instructions
These popsicles are intended to be enjoyed frozen and do not require reheating. However, to slightly soften them for better texture and flavor, remove from the freezer and let sit at room temperature for 3–5 minutes before eating.
Modifications & Additions
To boost the protein content while staying paleo-friendly, consider adding a spoonful of collagen peptides or a compatible paleo protein powder to the mix before blending. For added fiber and healthy fats, a tablespoon of chia seeds or flaxseed meal can be blended in without significantly altering the texture. You can also enhance micronutrient content with a handful of spinach or a few slices of avocado — these additions blend well with the coconut milk and fruit and offer extra vitamins and minerals while keeping the recipe paleo-compliant.
