Ingredients

  • 6 slices of nitrate-free bacon
  • 5 eggs
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup zucchini, finely diced

  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat oven: Set oven to 375°F (190°C) and lightly grease a 6-cup muffin tin with coconut oil.
  2. Prep the bacon cups: Partially cook the bacon in a skillet over medium heat for about 4–5 minutes, until it starts to render but is still pliable. Line the sides of each muffin cup with a slice of bacon to form a ring.
  3. Make the egg filling: In a bowl, whisk together eggs, bell pepper, zucchini, green onion, salt, and pepper.
  4. Fill the cups: Pour the egg mixture into the bacon-lined cups, filling about 3/4 of the way.
  5. Bake: Place in the oven and bake for 18–22 minutes, or until eggs are set and tops are slightly golden.
  6. Cool and remove: Let cool for a few minutes before removing from the tin. Use a spoon to gently lift each cup out.
  7. Serve warm, or cool completely and refrigerate for later.

Storage and Reheating Instructions

Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 30–45 seconds or in a 300°F oven for 10 minutes.
