Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup almond flour
  • 1/4 cup almond butter
  • 1/4 cup chopped almonds
  • 1/4 cup unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a small baking dish (around 8×4 inches) with parchment paper.
  2. In a medium mixing bowl, mash the ripe bananas with a fork until smooth with minimal lumps.
  3. Add the almond flour, almond butter, vanilla extract, and cinnamon to the mashed bananas. Stir until fully combined into a thick batter.
  4. Fold in the chopped almonds, shredded coconut, and chia seeds until evenly distributed throughout the mixture.
  5. Transfer the mixture into the prepared baking dish and spread it out evenly using a spatula or the back of a spoon.
  6. Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Remove the dish from the oven and allow the bars to cool completely in the pan for about 20 minutes.
  8. Once cooled, lift the bars out using the parchment paper, slice into 2 large servings or 4 smaller bars, and enjoy.

Storage Instructions

Store leftover Banana Almond Breakfast Bars in an airtight container in the refrigerator for up to 5 days. For longer storage, place bars in a freezer-safe container or bag and freeze for up to 2 months. Separate layers with parchment paper to prevent sticking.

Reheating Instructions

To reheat, warm the bars in the microwave for 15–20 seconds or in a 300°F (150°C) oven for about 5–7 minutes. Reheating in the oven will help restore a firmer texture, while the microwave provides quicker results with a softer chew.

Ingredient Swaps & Enhancements

To boost protein content, consider adding a tablespoon of collagen peptides or a scoop of paleo-friendly protein powder to the mix. For added fiber and omega-3s, flaxseed meal can substitute or complement the chia seeds. Chopped walnuts or pumpkin seeds can be swapped in for almonds to vary the taste and mineral content, particularly zinc and magnesium. If you’d like a bit more natural sweetness and antioxidants, mix in a few chopped dates or dried unsweetened blueberries. All of these additions keep the bars nutrient-rich while maintaining a paleo-friendly profile.
