Crisp bacon forms the perfect edible “cup,” filled with eggs and colorful vegetables for a protein-rich start to your morning. They’re easy to prep ahead, portable, and customizable to whatever veggies you have on hand.
Ingredients
- 6 slices of nitrate-free bacon
- 5 eggs
- 1/4 cup red bell pepper, finely diced
- 1/4 cup zucchini, finely diced
- 1 green onion, sliced
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
Instructions
- Preheat oven: Set oven to 375°F (190°C) and lightly grease a 6-cup muffin tin with coconut oil.
- Prep the bacon cups: Partially cook the bacon in a skillet over medium heat for about 4–5 minutes, until it starts to render but is still pliable. Line the sides of each muffin cup with a slice of bacon to form a ring.
- Make the egg filling: In a bowl, whisk together eggs, bell pepper, zucchini, green onion, salt, and pepper.
- Fill the cups: Pour the egg mixture into the bacon-lined cups, filling about 3/4 of the way.
- Bake: Place in the oven and bake for 18–22 minutes, or until eggs are set and tops are slightly golden.
- Cool and remove: Let cool for a few minutes before removing from the tin. Use a spoon to gently lift each cup out.
- Serve warm, or cool completely and refrigerate for later.
Storage and Reheating Instructions
Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 30–45 seconds or in a 300°F oven for 10 minutes.
Substitutions and Variations
- No bacon? Use thinly sliced prosciutto or skip the meat and just bake the egg and veggie mix in silicone muffin cups.
- More veggies: Add mushrooms, spinach, or kale for extra nutrients.
- Spice it up: Stir in a dash of hot sauce or a pinch of red pepper flakes.
- Add herbs: Try chopped parsley, chives, or thyme for a fresh flavor boost.
These breakfast cups are everything you love about a classic skillet breakfast—reimagined in perfectly portioned, paleo-friendly bites.
